We eat a lot a guacamole in our house. We always have, probably always will. When I saw this recipe, I wasn’t too excited – it’s another guacamole recipe.
Well, I was wrong! This is more than a guacamole recipe. The dip does indeed have the general flavors of guacamole, but it is more.
The dip is bright, light and fluffy! The lemon juice adds the brightness and a little bit of tang. The cream cheese when whipped gives it the fluffiness.
My husband saw me making it and told me he didn’t want any, he was full. Well, I like to get my family’s take on the recipes I’m trying out. When I finished the dip, I took it in to him with some tortilla chips and asked him to at least taste it and let me know what he thought. He obligingly took a bite, and then preceded to finish off half the bowl!
Needless to say, we will be making this again. Delicious!
California Avocado Dip
2 Rip Avocados, Seeded and Peeled
1 Package (8 ounces) Cream Cheese
2 Tablespoons Lemon Juice
2 Tablespoons Grated Onion
1 Small Green Pepper, Minced
1 Ripe Tomato, Chopped
Salt and Pepper to Taste
In a blender, combine avocados, cream cheese, lemon juice and onion. Whirl at top speed until smooth. Scrape mixture into a bowl. Stir in green pepper and tomato. Season to taste. Chill. When ready to serve, place in a bowl and surround with potato chips or tortilla chips.
