Not Great

I thought this would be an interesting recipe to serve as a side dish. But it didn’t really work.



I did everything as described in the recipe. It should have worked.



Basically you make creamed spinach first. With the addition of the flour to make it a little thicker.



Adding the eggs should make the “batter” hold together. Should being the operative word.



As soon as I dropped the balls in the boiling water they fell apart. Basically spinach everywhere.



I tried my best to get them to go back together while cooking. It was a mess though.



After the five minutes I scooped everything out of the pan into a paper lined bowl. My attempt was to absorb some of the liquid.



I formed the spinach into balls with two spoons. The spinach mixture did press together fairly well. Unfortunately they didn’t really stay together.



Also a negative is that they were a bit flavorless. Just really not an impressive recipe.


SPINACH BALLS

4 Tablespoons Butter

4 Teaspoons Flour

2 Teaspoons Cream

1 1/4 Cups Cooked Spinach, Chopped

3 Eggs

1/2 Teaspoon Salt

1/8 Teaspoon Pepper

Dash Mace

1/2 Teaspoon Sugar

1 Recipe Cream Sauce


Melt butter. Add flour and blend well. Add cream and spinach. Remove from heat. Add eggs and seasonings. Mix well. Drop from spoon into boiling salted water. Poach for 5 minutes. Serve in cream sauce.
