No Mayonnaise Cole Slaw

I have never made a cole slaw without mayonnaise in the dressing before.



First, the cole slaw and apples blend together so well! I love the combination!



I think I have mentioned before that I am not a fan of eggs. So I was nervous using the egg yolks to make the dressing. I was scared that the cole slaw would taste too much like egg.




Thankfully it did not. The egg yolks mix really well with the other ingredients and it doesn’t taste at all like egg!




You really don’t miss the mayonnaise. The slaw is still creamy like a traditional slaw.



Overall the dish is light, yummy and fresh tasting!



CALIFORNIA SLAW

1 Small Head of Cabbage

2 Tart Apples, Chopped

1 Medium Onion, Minced

2 Pimientos, Minced

3 Hard Cooked Eggs

¼ Teaspoon Salt

1 Tablespoon Sugar

1 Teaspoon Dry Mustard

1 Tablespoon Melted Butter

1/3 Cup Lemon Juice

½ Cup Cream, Whipped

Parsley


Shred Cabbage and combine with apples, onion and pimientos. Combine yolks, salt, sugar, mustard and butter into a paste. Stir in lemon juice and blend. Whip cream, then add to mixture. Combine with shredded cabbage and garnish with egg whites and parsley.
