No Butter Needed

Okay, so I love lemon - cake, bread, lemonade - I even enjoy the scent of lemon! So, I am very discerning about lemon foods. The best lemon cake I ever had was for my 16th birthday. A man named John Ratsenberger, my friend's grandfather, made it at my mother's request. It was a lemon bundt cake with lemon glaze. It even had yellow candles. It was so delicious!


So today I was excited to make the Lemon Tea Bread recipe. And I have to say I was not disappointed! The recipe was very easy to make. It took only about 5 minutes to put together, then 45 minutes in the oven.



About ten minutes into baking time, this amazing aroma started wafting through my kitchen. I couldn't wait to eat it! I love when foods smell good while cooking. It's like a promise of deliciousness with every breath.





The glaze is what really makes this bread great. The lemon juice and sugar combined have time to soak into the exterior of the loaf while it cools.




I was worried that the pecans would be too much, but they really added a nice layer to the bread. They were a nice crunchy addition.




Generally, when eating fruit breads, like banana or zucchini bread, i like to eat the bread slightly warm and spread with butter. Well, there was no butter needed with this lemon bread. It was moist, tart and absolutely delicious! I highly recommend making some for yourself today!




The Recipe:


LEMON TEA BREAD

1/2 Cup Milk

2 Eggs

1 Cup Granulated Sugar

1/3 Cup Butter, Melted

1 1/2 Teaspoons Grated Lemon Peel

1 1/4 Cups All Purpose Flour

1 Teaspoon Baking Powder

1 Teaspoon Salt

1/2 Cup Chopped Pecans


GLAZE:

1/4 Cup Granulated Sugar

3 Tablespoons Fresh Lemon Juice


Preheat oven to 350 degrees. Grease a loaf pan, set aside.

In a mixing bowl combine milk, eggs, sugar, butter, and lemon peel. Beat at medium speed until well blended. Add dry ingredients, beat at low speed just until they are moistened and mixture is smooth. Fold in pecans. Pour batter into loaf pan


Bake 45 to 50 minutes or until toothpick inserted in center comes out clea.


Meanwhile, combine sugar and lemon juice for glaze.


Place bread, still in the pan, on wire rack to cool. Slowly pour glaze onto bread while it is still hot. Let stand 10 minutes in pan, remove and cool completely on wire rack.
