No Bake Cookie

I was first introduced to no bake chocolate cookies about twenty years ago. A friend made them and after my first bite I was hooked.



The recipe is pretty simple. Boiling the sugar, milk, butter and cocoa gives you a fudge like mixture. Boiling it for only a minute gives you time to work with the mixture before it hardens.



The peanut butter helps bind the oats and coconut together. The coconut is not something I usually add when I make these cookies.



I did like the addition of the coconut. It adds a little sweetness. And a little texture.




You need to be careful when working with the hot mixture. It can burn your fingers!



But you do have to work very quickly. The mixture hardens very fast as it cools. You want to make sure to get all the cookies dropped before the mixture cools.



You will not be able to shape the cookies once the mixture cools.



These are great cookies, everyone will love them!



CHOCOLATE OATMEAL COOKIES

2 Cups Sugar

1/2 Cup Milk

1/4 CUp Butter

1/3 Cup Cocoa

3 Cups Quick Cooking Rolled Oats

1/2 Cup Flaked Coconut

1/2 Cup Peanut Butter

1 Teaspoon Vanilla


Combine sugar, milk, butter and cocoa. Boil 1 minute. Remove from heat. Mix in remaining ingredients. Drop on wax paper. Cool.
