Needs More Cooking Time

This was an interesting way to make potatoes.



The garlic is great, and yes there is a lot of garlic. Not that that is a problem. I like garlic. But is you don’t, these may not be the potatoes for you!




For the tomato pulp, I used diced tomatoes that I crushed with a fork. The potatoes add a nice acidity throughout the dish.



These would have been amazing, but unfortunately, they did not cook well enough. The potatoes were on the al dente side.



Even with that, they still tasted good.



ARMENIAN POTATOES

1/4 Cup Salad Oil

4 Cups Diced Uncooked Potatoes

1/4 Cup Tomato Pulp

1/2 Cup Water

1 1/2 Teaspoons Salt

1 Teaspoon Paprika

1 Bulb Garlic, Each Clove Sliced

1 Bunch Parsley


Mix ingredients, place in a casserole. Bake in a 325 degree oven for 40 minutes.
