My House Smells Like Oranges

There is a lot of orange rind in this recipe.



The orange rind in the batter for the cake gives the cake a subtle orange taste. Combined with the orange juice, it really does have the orange taste throughout.





The topping give you an extra hit of orange, with a little sweetness from the brown sugar. So basically an orange crumble topping.





The cake is moist and does puff a little while cooking. So it has a nice and airy feel to it.




And the scent of the orange filled my house while it was baking!



I was really upset that I had promised this to the fundraiser. The smell made me want to eat all of it!



Definitely worth trying this recipe out!




Orange Coffee Cake

2 Cups Sifted Flour

1/2 Teaspoon Salt

1/2 Cup Sugar

4 Teaspoons Baking Powder

1 1/2 Teaspoons Grated Orange Rind

1/4 Cup Shortening

1 Egg, Beaten

1/2 Cup Orange Juice

1/2 Cup Milk

TOPPING

1 Cup Flour

3/4 Cup Brown Sugar

2 Tablespoons Melted Butter

2 Tablespoons Orange Juice

1 1/2 Teaspoons Grated Orange Rind

1/2 Teaspoon Cinnamon

1/4 Teaspoon Salt



Sift flour, sugar, salt, and baking powder. Stir in orange rind. Cut in shortening. Combine egg, orange juice, and milk. Add to dry ingredients, stirring only until blended. Spread dough in a well greased 9 inch square pan. Combine topping ingredients with a fork until crumbly. Sprinkle topping over the cake. Bake in a 400 degree oven for 25 to 30 minutes.
