My Best Biscuits Yet

I really want to improve my biscuit making ability. Thankfully, it appears that I am, just slowly. . .



I think the key to making biscuits is to handle the dough as little as possible. I did that with this dough, and the biscuits did rise, well most of them.




I opted to pat out the dough instead of rolling it. I think this helped with the rising process.




The majority of the biscuits did rise wonderfully. The second cutting of the biscuits were the ones that didn’t rise as well.





I did brush the biscuits with melted butter before placing them in the oven. I know the recipe didn’t call for it, but there is nothing better than a buttery biscuit!



The biscuits themselves were not too dense. They were flakey and delicious!



BAKING POWDER BISCUITS

2 Cups Flour

3 Teaspoons Baking Powder

1/2 Teaspoon Salt

1/3 Cup Shortening

7/8 Cup Milk


Sift the flour with the salt and baking powder. Add the shortening and cut in until it resembles coarse meal. Add the milk all at once and stir briskly with a fork until thoroughly dampened. Do not over stir. Turn onto light floured surface and knead 8 or 10 times. Pat out to 3/4 Inch thick. Cut with a biscuit cutter and place on a lightly greased baking sheet. Place in a 450 degree oven for 10 to 15 minutes.
