Molasses Cookie

This is another one of those recipes where the title of the recipe is a bit deceptive. I was expecting a sugar cookie.



What I got was a lovely little molasses cookie.




The cookies were quite crisp once they were cooled. So if you like a crisp cookie these will definitely fit the bill.




The molasses and cinnamon do a lot to give the cookies a lovely flavor. They feel very fall like. I think they would be a great Thanksgiving or Christmas cookie. They just felt like it.



The best part is their size. They were very tiny and petite.



This made them the perfect bite size cookie.



The only problem with delicious bite size cookies is that it is really easy to just keep popping them into your mouth!



SUGAR CRISPS

1/2 Cup Shortening

3/4 Cup Sugar

1 Egg, beaten

2/3 Cup Molasses

1/2 Teaspoon Vanilla

2 1/2 Cups Cake Flour

1 Teaspoon baking Powder

2 Teaspoons Cinnamon

1/3 Teaspoon Baking Soda

1/2 Teaspoon Salt


Cream shortening with sugar. Add egg, molasses and vanilla. Sift dry ingredients together. Add to creamed mixture, mixing thoroughly. Drop dough from a 1/4 teaspoon onto a well greased cookie sheet 2 inches apart. Bake in a 350 degree oven for 12 minutes.
