Mocha Goodness

This recipe sounded interesting to me - coffee and chocolate - how could you go wrong!



And I just have to say - Wow! These are absolutely amazing.





The brownies are soft and gooey once baked. They do not have a whole lot of flour, so this helps keep that gooeyness.





The coffee comes through nice and strong. Combined with the chocolate it really does give you an amazing mocha flavor.




I think these brownies would be even more amazing served warm with a little vanilla ice cream on top.



Either way - they are wonderful!



COFFEE BROWNIES

3/4 Cup Sifted Flour

1/2 Teaspoon Baking Powder

1/4 Teaspoon Salt

2 Tablespoons Instant Coffee

2 Ounces Unsweetened Chocolate

1/3 Cup Butter

2 Eggs

1 Cup Granulated Sugar

1 Teaspoon Vanilla

1/2 Cup Chopped Walnuts


Heat oven to 375 degrees. Grease an 8 inch square pan. Sift together the flour, baking powder, salt and coffee. In a double boiler over hot water melt the chocolate with the butter. Cool. Beat eggs with sugar until light and fluffy. Add to chocolate mixture and blend well. Stir in flour mixture. Add vanilla and nuts. Spread in prepared pan. Bake 25 minutes. Cool. Cut into 2 inch squares.
