Meh Side Dish

I had high expectations for this side dish. I really enjoy zucchini.

Unfortunately the stuffing was unexceptional. Onions and bread crumbs, okay. The parmesan didn’t add much flavor.



The zucchini was nicely cooked - not too soft, but not too hard either.

It just didn’t have a ton of flavor in the end. It was okay, but just that. Nothing exceptional. . .
STUFFED ZUCCHINI SQUASH
6 Medium Zucchini
3 Cups Soft Bread Crumbs
1/2 Cup Parmesan Cheese
1 Onion, Minced
3 Tablespoons Minced Parsley
1 Teaspoon Salt
Dash Pepper
2 Eggs, Beaten
2 Tablespoons Butter
Wash zucchini, cut off ends but do no pare. Cook in boiling water for 5 minutes. Cut in half lengthwise. Scrap out pulp. Chop pulp and add remaining ingredients. Stuff zucchini shells and place in a 13x9 baking dish. Dot with butter. Bake in a 350 degree oven for 30 minutes.
