These balls just didn’t work out.
To start they were overly sweet. I think the sugar and the cherries was too much.
They were also kind of gummy. They never really hardened, even when I froze them. They were very soft and mushy.
The almond flavor was nice. The rum was almost nonexistent. You really couldn’t taste the rum at all.
So, while I wanted to like them, I really just didn’t Too bad really.
ALMOND RUM BALLS
¾ Cup Confectioners’ Sugar
¼ Cup Butter, Softened
1 Cup Ground Almonds
1 Teaspoon Rum
¼ Cup Chopped Candied Cherries
In a small bowl, beat sugar and butter until well blended. Beat in almonds and rum; then stir in cherries. With hands, shape mixture into 1 inch balls. Keep for up to 1 week in the refrigerator.
