Meat Loaf In A Bundt Pan

Basically this is a very large meatloaf. Mixing the hamburger and pork gives a very nice flavor. The pork adds moisture, so it is a nice and moist meat loaf.



Grated potato is something new in a meatloaf for me. It adds a nice bit of something. Just not sure how to describe it. It isn’t bad – it’s just different. Kind of like hash browns mixed in.





Unfortunately, the meat ring is a bit greyish in color. I’m not sure why this is, it baked well and should have browned.



It is a nice presentation with the potatoes in the middle.



So overall, good flavor, nice presentation. . .



NEW POTATO MEAT RING

1 Pound Hamburger

½ Pound Ground Pork

2 Cups Grated Raw Potatoes

2 Eggs, Slightly Beaten

½ Cup Chopped Onion

1 Teaspoon Salt

½ Teaspoon Thyme

½ Teaspoon Rosemary

Creamed New Potatoes


Mix all ingredients. Bake in a greased ring mold or Bundt pan at 350 degrees for 1 hour. Unmold on serving platter. Fill center of the ring with creamed potatoes.
