Maple Goodness

I have never heard of maple sugar before. I had to do some research to figure out what it was and where to get it.



Apparently, maple sugar is the result you get when you boil down pure maple syrup. Once all the liquid evaporates you have a rich, maple sugar left over.




Using it to make the fudge gives you a ton of real maple flavor. It is definitely a different maple flavor than you would get using maple flavoring.




For the nuts, I used walnuts. I think walnuts and maple go so very well together.




This fudge was delicious. It is worth the time and effort it takes!



MAPLE FUDGE

2 1/2 Cups Maple Sugar

1 Cup Cream

1/2 Cup Boiling Water

1 Cup Broken Pecans or Walnuts


Break the maple sugar into small pieces and heat in a saucepan with the water. When it is dissolved, add the milk. Bring to 238 degrees. Remove from heat and cool. When lukewarm, beat until it creams. Add the nuts. Spread in a buttered pan and mark into squares. Cool completely before cutting.
