Lovely Beans

We eat a lot of vegetables in our house. Mostly because my husband is an avid gardener, so we always have an abundance of vegetables.



Also, we like to east healthily –or at least try to.


I am always looking for side dish and vegetable recipes that add just a bit of interest. There’s only so many steamed and sautéed vegetables you can eat!



This is a very simple recipe, but provides a nice alternative to steamed beans.


Of course, the beans are steamed, but adding the cornstarch provides a bit of “gravy” to them. Mixing the cornstarch with the bean water does coat them nicely. The cornstarch really sticks well to the beans.



I opted to use the chutney vice the relish. Mostly because I had a jar of chutney opened and in the fridge and not relish. Use what you have!


The chutney was the Bandwagon Chutney I have blogged about before. You can find the recipe for it in the CANNING section of this website.



The chutney provided a bit of sweetness from the fruit it was made with. Don’t worry – the beans were not overly sweet!



Overall a very enjoyable side dish!



SAVORY GREEN BEANS

1 Pound Fresh or Frozen Green Beans

½ Teaspoon Cornstarch

¼ Cup Water

2 Tablespoons Butter

¼ Cup Pickle Relish or Chutney


Snip ends from beans if using fresh. Place in saucepan. Combine cornstarch and water. Pour over beans. Add butter and relish or chutney. Stir to combine. Cook over medium low heat for approximately 15 minutes.
