This is a very interesting dish!



The pineapple actually works really well with the sweet potatoes. They provide a little bit of sweetness, but not too much.



I think I would cut the sweet potatoes a little thinner if I made this again. Some of the slices did not cook enough and were a bit al dente.



The pork cooked nicely. Not too done, but cooked through.





The bacon was a little soft. To get it crispier, I would take the lid off a little sooner. Maybe 15 minutes instead of ten.



I would definitely not add additional time; I think that would cause the pork to overcook.



HAWAIIAN BAKED PORK

2 Cups Crushed Pineapple

3 Medium Sweet Potatoes

2 Tablespoons Brown Sugar

4 Pork Shoulder Steaks

Salt and Pepper to Taste

4 Strips Bacon


Place pineapple in a large baking dish. Pare and slice sweet potatoes, place over pineapple. Sprinkle with brown sugar. Season pork with salt and pepper then place on top of sweet potatoes. Arrange bacon strips on top of pork. Cover and bake in a 350 degree oven for 1 hour. Remove the cover, increase temperature to 450 degrees and cook an additional 10 minutes.
