Lots and Lots Of Cookies

I was making cookies for an event, so I needed a lot of them. This seemed like a great recipe to try for that.



The basic dough is very stiff. It was so stiff I had to mix the additions in with my hands. I don’t really have a problem with that, I just wasn’t expecting it with a cookie dough.




There were about 100 cookies once they were all mixed and baked.



I liked the variety the recipe provided. There really is a cookie for everyone with this recipe.



And they really are quite simple.



The additions are simple as well.


The chocolate addition gives you a rich chocolate cookie. Using the unsweetened chocolate gives them a little bitter chocolate flavor.





The spice cookies are very mild in flavor. Cinnamon and nutmeg blend well with the basic dough. They are a little snickerdoodle like.






The coconut addition gives you a basic vanilla cookie with the crunch of coconut.




For the fruit cookies I used candied cherries and candied lemon peel. The combination was a delightful cookie with a hint of citrus. The cherries give a contrasting pop of sweetness.





For the nut cookies I used walnuts. It gives you, once again, a simple vanilla cookie with the walnut crunch.




So if you need a lot of cookies, like I did, give this recipe a try. You will have a lot of cookies, with a lot of different flavors!




5 IN 1 COOKIES

1 1/2 Cups Shortening

3 Cups Brown Sugar

2 Eggs, beaten

2 Teaspoons Vanilla

1/2 Teaspoon Salt

4 Teaspoons Baking Powder

6 Cups Cake Flour

CHOCOLATE

2 Ounces Melted Chocolate

SPICE

1/2 Teaspoon Cinnamon

1/4 Teaspoon Nutmeg

FRUIT

1/2 Cup Finely Chopped Candied Fruits

NUT

1/3 Cup Finely Chopped Nuts

COCONUT

1/3 Cup Shredded Coconut


Cream shortening and sifted sugar until light and fluffy. Add eggs and flavoring. Combine and sift in dry ingredients. Knead in the last of the flour. Divide dough into five equal parts. Heat oven to 375 degrees. To one part add melted chocolate. Bake 10 minutes. To second part add cinnamon and nutmeg. Bake 9 minutes. To third part add dried cut up fruit. Bake 14 minutes. The fourth part add nuts. Bake 12 minutes. To fifth part add coconut. Bake 10 minutes.
