It Is A Salad

When I set this dish down on the table, my husband asked “Didn’t we just have Cole slaw?”



Well, this is not Cole slaw. It is really a cabbage salad.



The lemon juice, sugar and oil are a very simple dressing. The quantity is small, so it just barely coats some of the cabbage shreds.



The carrot gives the salad some lovely color.



You also get color from the orange and apple. They also provide some sweetness to the cabbage.



The salad is bright and light and very crunchy.



I opted not to serve it on greens. That just seemed a touch too much.



I think the salad stood well on its own. It was a lovely bright side dish with the Cheese Frankfurters.


JIFFY CABBAGE SALAD

1/4 Carrot, Scraped

1/2 Orange, Pared

1/2 Apple, Cored

1/2 Pound Cabbage, Shredded

1/2 Tablespoon Lemon Juice

1 Tablespoon Sugar

1 Tablespoon Oil

Salad Green


Cut carrot and fruit into small pieces and add cabbage. Combine lemon juice, sugar and oil; pour over salad and mix with a fork. Turn into salad bowl and garnish with greens. Chill until ready to serve.
