Thankfully this dish tastes better than it looks. It really does look like a brown mess.
I cooked the lentils until they were just soft enough. I did not want mushy lentils. I also seasoned then lightly with salt and used chicken broth to cook them in.
For the sausage I used a chicken sausage with Italian seasoning.
The pepper adds the needed crunch. As do the butter crumbs on top.
The end result of the dish is something that looks unappealing, but actually tastes quite good. I was not at all unhappy with making it!
LENTIL AND SAUSAGE CASSEROLE
1 Cup Cooked Lentils
6 Sliced Sausages, Cooked
1 Bell Pepper, Chopped
2 Tomatoes, Chopped
Buttered Crumbs
Puree half the lentils. Combine puree with remaining lentils. Add sausage, bell pepper and tomato. Place in a baking dish and cover with buttered crumbs. Bake 15 minutes.
