It has to be the cinnamon that is considered the spice in this recipe. But, is cinnamon spicy?
I don’t think so. Not really sure why the recipe is called spicy.
The cake is very soft and moist. The cheese is an interesting addition.
I do think a nice sharp cheddar cheese goes very well with apples. I have seen many recipes that call for cheese in the crust of an apple pie. My husband thought it was strange, but I do think it goes pretty well.
Working the apples into a blossom pattern gives the cake a very nice appearance. They do cook well, so they are nice and soft.
The brown sugar and cinnamon combine to make a streusel of sorts on the top. And of course, the butter soaks into everything.
The cake was pretty quick in the preparation. I made this for a Saturday morning breakfast.
SPICY APPLE COFFEE CAKE
2 Cups Sifted Flour
1 Tablespoon Granulated Sugar
3 Teaspoons Baking Powder
3/4 Teaspoon Salt
4 Tablespoons Shortening
1/2 Cup Grated Nippy Cheese
3/4 Cup Milk
3 Apples
1/3 Cup Brown Sugar
1/2 Teaspoon Cinnamon
1 Tablespoon Butter
Sift flour, sugar, baking powder and salt together. Cut in shortening and cheese. Add milk to make a soft dough. Turn onto a floured board and knead for 30 seconds. Pat out dough into a 9 inch round pan. Pare apples, core and slice thin. Arrange apples in a petal design over the top. Sprinkle with brown sugar and cinnamon. Dot with butter. Bake in a 425 degree oven for 25 minutes.
