What an interesting take on coleslaw!
The cauliflower was very crisp, as were the radishes an onion. I really loved the radishes - they gave the dish a nice crunch and a little bit of the radish spiciness.
The garlic vinaigrette had a nice amount of vinegar and oil. Mixing it with the sour cream gave the dish a nice, flavorful and creamy sauce.
It was a nice side dish which I served with the fish and chips. It reminded me a bit of a broccoli salad.
CAULIFLOWER COLESLAW
1 Medium Head Cauliflower
1 Bunch Radishes, Sliced
1 Small Onion, Diced
3/4 Teaspoon Salt
Dash Pepper
1 Cup Sour Cream
1 Cup Garlic Vinaigrette
Combine vinaigrette and sour cream, mixing until smooth. Refrigerate. Cut cauliflower into flowerets. Add cauliflower, radishes, onions, salt and pepper in a serving bowl. Pour enough sauce to moisten over top and blend. Keep chilled until ready to serve.
