Interesting Potatoes

This is definitely not a traditional potato salad. First - there is no mayonnaise that most salads have. Second, you serve it warm.



The most interesting thing about this dish is the dill pickle. It provides a very interesting and tangy flavor.




The other ingredients blend well. You get the soft creaminess of the potatoes and the crunch from the bacon, celery and onion.




The pickles and vinegar really provide that vinegar kick.



I served this with the Rheinischer Sauerbraten and Red Cabbage with Apples. It was a great German themed meal!



GERMAN HOT POTATO SALAD

6 Medium Potatoes, Chopped With Skin

4 Strips Bacon, Minced

¼ Cup Chopped Onion

¼ Cup Chopped Celery

1 Chopped Dill Pickle

¼ Cup Water

½ Cup Vinegar

½ Teaspoon Sugar

½ Teaspoon Salt

1/8 Teaspoon Paprika

¼ Teaspoon Dry Mustard


Cook potatoes until tender. Combine all ingredients in skillet, stir gently with the potatoes until incorporated. Serve.
