Interesting Idea . . .

This seems like a really good idea. I wish it were.



The recipe says it makes 12 muffins, but really there is only enough batter for 10.



Unfortunately the muffins have no real flavor. They are quite bland. Since there is more muffin than filling, you get a lot of bland and not a whole lot of flavor.



For the jelly I used a strawberry jam I made last year and canned. The peanut butter and jelly mixture does taste nice. There just isn’t enough of it.




So I don’t think I would recommend these. Too much work for not enough flavor.




PEANUT BUTTER AND JELLY MUFFINS

¼ Cup Peanut Butter

¼ Cup Jelly or Jam

2 Cups Sifted Flour

2 Teaspoons Baking Powder

½ Teaspoon Salt

1 Tablespoon Sugar

1 Egg, beaten

1 Cup Milk

¼ Cup Melted Butter


Mix peanut butter and jelly together. Set aside. Sift together flour, baking powder, salt, and sugar. Mix together egg, milk and melted butter. Make a well in the center of the dry ingredients. Add liquid ingredients and stir just enough to mix. Batter should still be lumpy/ Fill greased muffin tins ½ full with batter. Add a spoonful of peanut butter and jelly mixture to each tin. Finish filling tins with remaining batter. Bake in a 400 degree oven for 20 to 25 minutes.
