This recipe is full of interesting and different combinations. It is kind of a fruit salad. But then it has celery. . .
The pineapple and celery are the main base to the bowl. The pineapple adds the lovely tart sweetness. The celery adds a ton of crunch.
The cream cheese, when blended with the Coffee Fruit Dressing gives the sauce base a nice thickness and creaminess.
The pecans add more crunchiness. They also give a touch of saltiness to the fruit salad.
Overall, I found this to be a little on the strange side. You have pineapple and coffee, which could go together all right I suppose.
But then you add the celery and the recipe looses me a bit.
I served it as a side dish. I imagine it could be a dessert, although one on the more savory side.
FRUIT BOWL SOPHISTICATE
1 Can Pineapple Chunks, Well Drained
1 Cup Sliced Celery
3 Ounces Cream Cheese
Coffee Fruit Dressing
Escarole
1/4 Cup Chopped Pecans
Combine pineapple and celery, refrigerate. Fold cheese and about 1/4 cup dressing together. Place escarole in a salad bowl. Place fruit on top and pour on dressing. Garnish with pecans.
