Ingredients Maybe, But Not A Meal . . .

This is one of those strange Mid Century meals.



Hot dogs – I used Nathan’s. I think they have the best flavor for hot dogs.



The zucchini was nicely cooked. I enjoy zucchini a little crispy, so this worked well. They were soft, but not too soft.



I used a yellow tomato fresh from our garden. Honestly I think I could have added more tomato and it would have been fine.



The cheese melts nicely. It isn’t overwhelmingly cheesy.



So, you layer all these ingredients and bake it. Everything by itself tastes good. You add them all together and it’s tastes – strange.



It just doesn’t seem to add up to a meal. It’s disjointed to say the least!



HARVEST TWOSOME

3 Medium Zucchini, sliced ½ “ thick

4 Frankfurters, Sliced

1 Tomato, Cut into Wedges

½ Teaspoon Salt

1/8 Teaspoon Pepper

1 Cup Grated Cheddar Cheese

2 Tablespoons Butter


Preheat oven to 350 degrees. Cook zucchini in 1 inch boiled salted water for 5 to 7 minutes. In a greased 8 or 9 inch pie plate, arrange zucchini, then franks. Tuck in tomato wedges. Sprinkle with salt and pepper then cheese. Dot with butter. Cover with foil and bake 20 minutes.
