I Was Not A Fan

I guess I am particular about my potatoes. Mashed potatoes are my go to holiday potato. I wanted to mix it up a bit, so I tried this recipe.



I think the potatoes would have been fine, if there were more potatoes.




The cream sauce is an interesting way to go. It is basically a white sauce with a little mace added.



Mace is in the Nutmeg family of spices. It is the outer shell of the nutmeg ground up, so it has a more earthy nutmeg taste.




My issue is that there was enough sauce for 6 cups of potatoes instead of 6 potatoes. There was more sauce than potato.



I do think the recipe is redeemable. Perhaps adding sauce a little at a time to get the right ratio. . .



CREAMED POTATOES

2 Tablespoons Butter

2 Tablespoons Flour

Dash Mace

1 1/4 Teaspoons Salt

1/4 Teaspoon Pepper

2 Cups Milk

Few Drops Lemon Juice

6 Cooked Potatoes, Cubed


Melt butter, blend in flour, mace, salt and pepper. Add milk and cook until thickened, stirring constantly. Add lemon juice and potatoes. Cook until potatoes are heated throughout.
