I had some leftover cauliflower. It wasn’t enough to make a side dish. At least, not a full cauliflower side.
I saw this recipe and thought perfect! I just wasn’t prepared to like them so much.
The ingredients are pretty simple. Really a basic fritter batter.
The mace was a nice touch. Mace is the outer shell of nutmeg. Nutmeg is ground from the inner part. So mace has a nutmeg adjacent flavor. I find it isn’t quite so powerful though.
I diced the cauliflower fairly small. I wanted to ensure that every bite had a little cauliflower in it.
The fritters fry up very quickly. Under five minutes with turning just once.
I did sprinkle the fritters with salt as soon as I removed them from the oil. The recipe doesn’t call for this, but I think it was the perfect thing to do.
The fritters are light and fluffy. The dough was cooked perfectly.
The cauliflower flavor isn’t super strong, but you can definitely tell it is in there.
These were so simple to eat, and eat, and eat. I really wish the recipe made more. Although, I’m probably should be glad it didn’t!
CAULIFLOWER FRITTERS
1 Cup Sifted Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
Dash Mace
1 Cup Chopped Cooked Cauliflower
1 Egg, Beaten
1/2 Cup Milk
2 Tablespoons Butter, Melted
Sift dry ingredients together and add cauliflower. Combine egg, milk and butter. Add to flour mixture and stir until smooth. Drop by tablespoons into deep hot fat. Cook 3 to 5 minutes.
