I'm Glad I Made It

This is one of the recipes I put off making. I had all the ingredients, but it just didn’t sound very good.



I will preface that by saying that I despise canned fruit cocktail. I love fresh fruit, eat it all the time. But canned fruit is a bunch of mushy grossness to me. My husband loves it, so does my daughter. I think they are weird. . .



This is why I was resistant to make the bread. But boy am I glad I finally did make it!




The cream cheese and butter blend well together and give the bread a richness that I wasn’t expecting. Added with the vanilla, the bread is almost cake like in texture and flavor.




The canned fruit gives you a fruit flavor throughout the bread as well as little bites of fruity goodness.



The bread was amazing! I never would have guessed, but we really enjoyed it! I sent the second loaf to work with my husband. He said it only took about an hour for it to all disappear.



FRUIT COCKTAIL BREAD

8 Ounces Cream Cheese, Softened

1 Cup Butter

1 1/2 Cups Sugar

1 1/2 Teaspoons Vanilla

4 Eggs

2 1/4 Cups Flour

1 1/2 Teaspoons Baking Powder

17 Ounce Can Fruit Cocktail, Drained

1/2 Cup Chopped Nuts


Line 2 loaf pans with aluminum foil, leaving a 1/2 inch collar around the edges. Grease bottom and sides of foil. Blend cream cheese, butter, sugar and vanilla. Add eggs one at a time, mixing well after each addition. Gradually add flour and baking powder. Fold in fruit and nuts. Divide batter between prepared pans. Bake in a 325 degree oven for 1 hour. Cool in pans for 10 minutes.
