How Surprising!

I really didn’t think these sounded all that good, but was going to try them anyway.



To start, I melted my chocolate in the microwave instead of on the stove top. This is mostly because I was having people over for dinner and was running behind. I didn’t really have a free burner on the stove. I know the Mid Century cook would not have been able to do this as there weren’t microwaves then, but it worked out.



My bananas were pretty brown which made mashing them very easy. I was able to get the mash pretty smooth, so there were no chunks of banana in the brownies.




The frosting was absolutely delicious. I cheated with it as well, melting the butter in the microwave and adding the cocoa powder to the hot butter. This worked just fine and I was able to get the right consistency to the mixture.




The frosting does harden as it sits, so you want to make sure to prepare it right before you need it. I only spread frosting on the pieces of brownie I was serving. When I went back to frost the remaining brownies, I found that I could not as the frosting had hardened and wouldn’t spread.



Overall, these were great! I went in with low expectations and they were blown away!




BANANA BROWNIES

6 Ounces Semisweet Chocolate Morsels

½ Cup All Purpose Flour

½ Cup Sugar

¼ Teaspoon Salt

½ Teaspoon Baking Powder

2 Eggs, Well Beaten

1 Cup Mashed Bananas

1 Teaspoon Vanilla

½ Cup Chopped Pecans

Chocolate Frosting

3 Tablespoons Butter

2 Tablespoons Cocoa Powder

1 ½ Cups Powdered Sugar

2 Tablespoon Milk



Melt chocolate in the top of a double broiler; cool slightly. Combine dry ingredients in a mixing bowl; add chocolate, eggs, bananas and vanilla. Beat on medium speed until well mixed. Stir in pecans. Spread batter into a well greased 8x8 baking dish. Bake at 350 degrees for 35 to 40 minutes. Cool. For the Frosting – Combine butter and cocoa powder in a saucepan, place over low heat; stirring constantly until smooth. Add powdered sugar and milk. Remove from heat and whip with an electric mixer until light and fluffy. Add more milk is necessary to reach desired spreading consistency. Frost the cooled brownies with Chocolate Frosting.
