Herb and Vinegar Oil

Soaking the herbs in the vinegar gives the vinegar an herb flavor, without big chunks of herbs in the dressing.



The olive oil and lemon juice perfectly emulsify the dressing.



The dressing has to be shaken repeatedly as the ingredients never truly blend. That’s okay though, you just need to make sure you put it in a container that can be sealed.





Admittedly I left some of the herb in the dressing. I liked the herb taste a little more with the pieces in. I did not leave any garlic pieces in though.



The dressing was simple to put together, but tastes great!




ITALIAN DRESSING

1/3 Cup White Wine Vinegar

2 Cloves Garlic, Sliced

1/2 Teaspoon Oregano

1/2 Teaspoon Basil

1/4 Teaspoon Dill

2/3 Cup Olive Or Walnut Oil

1 1/2 Teaspoons Lemon Juice


Steep spices in vinegar for 1 hour. Strain and add oil and lemon juice. Chill. Shake before serving.
