Great Use For Old Bananas

It’s funny to me how bananas do or do not get eaten in my household. Sometimes, I buy bananas and they are all eaten in a day or two.



Sometimes, the bananas sit and sit, and sit until they turn brown.




I hate when they turn brown. But I guess it’s a good excuse to make banana bread.



The recipe is quite easy to make. Batter breads usually are.



And there really aren’t that many different variations. This recipe is interesting with the addition of the bran. It adds a heartiness to the bread.



The bread was a great breakfast bread. The bran gives it a little bit of a healthy aspect.



And it was a great use for my old, brown bananas.


BANANA BRAN NUT BREAD

1 1/2 Cups Sifted Flour

2 Teaspoons Baking Powder

1/2 Teaspoon Salt

1/2 Teaspoon Baking Soda

1/2 Cup Chopped Nut Meats

1/4 Cup Shortening

1/2 Cup Sugar

1 Egg, beaten

1 Cup Bran Cereal

1 1/2 Cups Mashed Bananas

2 Tablespoons Water

1 Teaspoon Vanilla


Sift flour, baking powder, salt and baking soda together. Add nut meats. Cream shortening and sugar until fluffy. Add egg and bran. Combine bananas, water and vanilla. Add to creamed mixture alternately with dry ingredients. Pour into a greased loaf pan. Let stand 30 minutes. Bake in a 350 degree oven for 1 hour.
