Gooey and Crisp Cookie

What an unusual cookie recipe. How can you make cookies with no eggs? And no dairy?



Well, somehow they worked out.




I was surprised at how well the ingredients went together.




The cookies remind me of a butterscotch lace cookie in texture. I was concerned that they were going to ooze off the baking sheet.




Thankfully they didn’t.



The cookies are crisp on the edges. Yet they somehow remain gooey on the inside.



The flavor is a lovely oaty coffee.



I was surprised by the cookie, but we really liked them!



COFFEE OATMEAL COOKIES

2 1/2 Cups Sifted Flour

1/2 Teaspoon Salt

2 Teaspoons Baking Powder

1/4 Teaspoon Baking Soda

2 1/2 Cups Rolled Oats

3/4 Cup Shortening

2 Cups Packed Brown Sugar

1/2 Cup Strong Cold Coffee


Sift together flour, salt, baking powder, and baking soda. Add oats. Cream shortening with sugar. Add dry ingredients and coffee alternately. Drop by tablespoonfuls at least 3 inches apart on a greased baking sheet Flatten each cookie with a wet cup, patting until the dough is 1/8 inch thick. Bake for 10 minutes in a 400 degree oven.
