Good Taste But Crumbly

The bread does not have an overwhelming lemon flavor, which is unfortunate.



I love lemon, and I love really lemony bread. I think you could infuse more of the lemon flavor by adding some lemon juice to the bread batter.




The walnuts were nice, but not too much.




The glaze is the honestly the best part. It has an amazing lemon flavor. I just wish there was more of it.



The biggest problem was that the bread literally fell apart when I was cutting it. This usually happens when the bread is too dry. This was not the case, so I am not sure what happened there.



GLAZED LEMON NUT BREAD

1/4 Cup Butter

3/4 Cup Sugar

2 Eggs

2 Teaspoons Grated Lemon Peel

2 Cups Sifted Flour

2 1/2 Teaspoons Baking Powder

1 Teaspoon Salt

3/4 Cup Milk

1/2 Cup Chopped Walnuts

2 Teaspoons Lemon Juice

2 Tablespoons Sugar


Cream together butter and 3/4 cup sugar until light and fluffy. Add eggs and lemon peel, beat well. Sift together flour, baking powder and salt. Add to creamed mixture alternately with milk, beating until smooth after each addition. Stir in walnuts. Pour into a greased loaf pan. Bake in a 350 degree oven for 50 minutes. Cool for 10 minutes. Combine lemon juice and sugar. Pour over top warm loaf.
