Fruity Pound Cake

This is a very simple pound cake recipe. Using the box mix makes it quick and easy.

You do get just a hint of the banana flavor. It isn’t overpowering.

You do not get the rum taste. I mean, not at all. That was disappointing. I was looking for the extra special flavor provided with the rum.


The cake is very dense when finished. Pound cake is generally a dense cake, but this one seemed overly dense.

Overall it wasn’t bad. My husband ate his with vanilla ice cream and chocolate sauce drizzled overtop.
JAMAICAN POUND CAKE
1 Large Ripe Banana
2 Eggs
¼ Cup Jamaican Rum
1 Package Pound Cake Mix
½ Cup Dairy Sour Cream
1/8 Teaspoon Nutmeg
3 Tablespoons Sliced Almonds
Mash banana to make ½ cup. Blend with eggs and rum. Beat into pound cake mix until smooth. Beat in sour cream and nutmeg. Butter a loaf pan, sprinkle with almonds. Pour cake batter into pan. Bake in a 325 degree oven for 70 to 75 minutes. Place on a wire rack and cool 10 minutes before removing from pan.
