Fruity Breakfast

I have a very compassionate and caring daughter. She likes to do little things for me, like buy me coffee - which I love.



On Monday she stopped by a bakery I enjoy and brought home a loaf of bread for me. I truly appreciate her doing this. The only problem was that I had made bread that day!




So now I had an abundance of bread and needed something to do with it. Breakfast for dinner seemed to be the perfect answer.



So the lovely loaf she brought home became the Hawaiian French Toast.



Mixing the pineapple juice in with the egg and cinnamon gave the toast a lovely hint of citrus flavor. It was just a hint though, not at all overpowering.



Grilling the pineapple slices give them a nice caramelized feel to the outside.



Layering the toast with the pineapple gives the dish a special feel. The pineapple goes very well with the toast. You hardly need any syrup as you get the sweetness from the fruit.



I am more of a pancake person, but I have to say I really enjoyed this!



HAWAIIAN FRENCH TOAST

4 Eggs

Dash Salt

3/4 Teaspoon Cinnamon

3 Tablespoons Sugar

1 Cup Pineapple Juice

8 Slices Day old White Bread

Butter

4 Slices Pineapple


Beat eggs until light. Add salt, cinnamon, sugar and pineapple juice. Beat thoroughly. Soak bread well in this mixture. Melt butter in a heavy skillet. Grill pineapple slices until heated through. Brown bread in melted butter until golden on both sides. Serve hot with 1/2 slice of pineapple topping each piece of toast.
