Fruit Waffles

We had company in town for the holiday. I always try to serve at least one hot breakfast during any quests stay.



These waffles were part of the hot breakfast I served.




Whipping the egg whites before folding them in to the batter gives the waffles a very light and airy feel. They were by no means heavy.



I diced the apples very small. They provided little pockets of fruit flavor throughout the waffles.




Being small, they also cooked nicely and were soft and delicious.



The cinnamon, which goes so well with waffles, was a lovely touch.



These were the perfect breakfast, we all truly enjoyed them!



APPLE WAFFLES

2 Cups Sifted Flour

3 Teaspoons Baking Powder

1/2 Teaspoon Salt

3 Eggs, Separated

1 1/2 Cups Milk

5 Tablespoons Melted Shortening

1 1/3 Cups Chopped Apples

1/8 Teaspoon Cinnamon

1 Tablespoon Sugar


Mix and sift dry ingredients. Combine egg yolks, milk and shortening. Add to dry ingredients. Mix in apples, cinnamon and sugar. Beat egg whites until stiff, fold into batter. Pour a spoonful into each section of a hot waffle iron. Cook until browned.
