Fruit Cake Cookie

Fruit cake gets a bad rap here in the US. In England, fruit cake is served as wedding cake, and is a very different thing.



The main component of any fruit cake is the candied fruit. That’s what makes these cookies similar to the cake.



The cookies are also very soft, which is a little different. They are not dense, but light.




The combination of spices give the cookies a lovely flavor.




And of course, the molasses. This gives the cookies a rich, dark color. And the molasses flavor.



The cookies are also pretty. In the dark cookie you get little bits of bright colored fruit.



They really are lovely. I hope the people I gifted them to liked them as much as I did.





CHRISTMAS JEWELS

1/3 Cup Shortening

1/4 Cup Sugar

1/2 Cup Molasses

1 Egg

1 1/2 Cups All Purpose Flour

1/2 Teaspoon Baking Soda

1/4 Teaspoon Salt

1 Teaspoon Cinnamon

1 Teaspoon Mace

1 Teaspoon Nutmeg

1/4 Teaspoon Ginger

1/4 Teaspoon Allspice

2 1/2 Cups Mixed Candied Fruit

2 Cups Chopped Nuts


Heat oven to 325 degrees. Mix shortening, sugar, molasses and egg. Stir dry ingredients together and blend into shortening mixture. Stir in fruit and nuts. Drop by teaspoonfuls about 1 inch apart on greased baking sheets. Bake 12 to 15 minutes.
