Fruit Bread

Another office bake sale item. I tried to pick things that were a little different. You just don’t see cherry bread all that often.

For the cherries, I used dried cherries. You could obviously use fresh as well. I don’t think the flavor would change, but the texture would change a bit.


The bread is soft, but not overly so. The cherries and nuts mix nicely into the bread.


They provide bites of sweetness and bites of saltiness throughout.


The bread was a nice alternative to the traditional lemon and banana breakfast breads. I do think a touch of butter would make your breakfast a little better.


Alternatively, a nice whipped cream cheese would be nice as well.
CHERRY NUT BREAD
2 1/2 Cups Flour
1 Cup Sugar
4 Teaspoons Baking Powder
1 Teaspoon Salt
1 Cup Chopped Walnuts
1 Cup Diced Sweet Cherries
1 Egg
1 1/4 Cups Milk
2 Tablespoons Oil
In a large bowl, mix well flour, sugar, baking powder, salt, walnuts and cherries. In a small bowl beat egg, milk and oil with a fork until blended. Pour over flour mixture. Stir until ingredients are just moistened. Turn into greased loaf pan. Bake in a 350 degree oven for 60 to 70 minutes. Cool in pan on a wire rack for 10 minutes.
