Fragrant and Flavorful

I did not hold out a lot of hope for the apple portion of this bread. I was not confident that there would be a lot of apple flavor with just juice.



The bread is very hearty and thick. Not in a bad way though.





If you eat a slice for breakfast, it will fill you up for sure.





The flavor is strong in apple. Honestly I was shocked it had so much apple flavor.





The oats are what make it thick I think. They provide the thickness and heartiness to the bread.



It was a nice bread, with lots of flavor.



APPLE OATMEAL BREAD

1 Cup Rolled Oats

1/4 Cup Packed Brown Sugar

2 Tablespoons Butter

1 1/2 Teaspoons Salt

1/4 Teaspoon Nutmeg

1 1/2 Cups Apple Juice

1 Envelope Yeast

3 1/2 Cups Flour, Divided

Melted Butter


Combine oats, sugar, butter, salt and nutmeg in a large bowl. Bring juice to a boil, pour over oat mixture. Stir well and cool to lukewarm, about 20 minutes. Sprinkle with yeast and mix well. Let stand 1 minute, then stir in 1/2 cup flour. Mix well then stir in 1 cup flour. Cover tightly with plastic wrap and let stand in a warm place for 1 hour. Stir down and add remaining flour. Turn onto a lightly floured surface and knead 5 minutes. Shape into a loaf and place in a greased loaf pan. Cover loosely and let rise 1 hour. Bake in a 350 degree oven for 50 minutes. Turn onto wire rack and brush with melted butter.
