Flat Biscuits

I have learned a lot of new skills since starting this blog. One of those skills is making biscuits. I was never very good at it before and usually ended up just buying the Pillsbury canned ones.

I have become quite good at making baking powder biscuits. I even get them to rise properly. It’s been fun trying to get them right.

Unfortunately, I have still not perfected buttermilk biscuits. I grew up in the south, so this is a bit of an embarrassment for me. Southern women should be great at making buttermilk biscuits. . .

For some reason I can not get these right.

The biscuits taste great, but they did not rise properly.

The end result were flavorful, but very flat biscuits.

I did brush the tops with butter when I took them out of the oven.

I will have to keep trying to get buttermilk biscuits right.

BUTTERMILK BISCUITS

2 Cups Sifted Flour

1/2 Teaspoon Baking Soda

2 Teaspoons Baking Powder

1 Teaspoon Salt

1/4 Cup Cold Shortening

1 Cup Cold Buttermilk

Sift flour, baking powder, baking soda and salt together. Cut in shortening with a pastry blender. Add the buttermilk and mix quickly. Knead for a few seconds on a lightly floured board. Pat out to 1/2 inch thickness. Cut with a biscuit cutter. Place in a greased pan close together. Bake in a 450 degree oven for 12 minutes.
