Fast and Easy Dinner

I say fast, which it is, it just has to cook for 45 minutes. But, it doesn’t take long to get to that point.



I used a combination of round steak and pork chops to make this. I could not find veal at the grocery store, so I just doubled up on the pork and meat. Once everything is cooked, I don’t think it made that much of a difference.



I also added the salt pork back to the dish. The recipe instructions are vague on this. I wasn’t sure if I should add it back in or not. I think the salt pork adds a nice saltiness so felt like it would be a waste to not use it in the end.



With the 45 minute cooking time, everything comes out nice and moist. The overall flavor is good as well.



I have never had chop suey until I started this blogging project. I seem to make it a lot now. It really reminds me of Mid West comfort food. Meat, veggies and a ketchup sauce – what could go wrong!





AMERICAN CHOP SUEY

1/8 Pound Salt Pork, Diced

½ Pound Round Steak, Cubed

¼ Pound Veal, Cubed

¼ Pound Pork, Cubed

Flour

1 ½ Cups Diced Celery

1 ½ Cups Diced Onion

½ Cup Sliced Mushrooms

½ Cup Ketchup

½ Cup Boiling Stock or Water

1 Tablespoons Worcestershire Sauce

1 Tablespoon Soy Sauce

Salt and Pepper to Taste


Cook salt pork until crisp, remove from pan. Dredge meats with flour and brown in salt pork drippings. Add remaining ingredients and simmer for 45 minutes. Serve with rice or noodles.
