Fancy Appetizer

What could be fancier than caviar? Well I wanted to go all out with this appetizer! It did not disappoint!





I had a dinner party with a focus on Mid Century food. The canapé was so very popular in that time period. And as I said – how can you go wrong with caviar!



The canapés were very easy to put together which made them perfect for a dinner party appetizer. I was able to put almost all the ingredients together ahead of time, so the canapés were very fresh when my guests arrived.



I used a sourdough for the toast rounds. They were crisp and buttery, which was lovely.



The scallions gave just enough of the onion flavor without being overpowering.



The caviar blended so very well with the chives and the capers.



I made my own French dressing, it was very fresh and not commercial tasting. And it was super easy.



Each bite was the perfect blend of salty and tangy. And you got the freshness from the cucumber.



There were none left – so it really was the perfect bite!


CAVIAR AND CUCUMBER CANAPES

1 English Cucumber, Sliced Thin

1 Recipe French Dressing

1 Loaf Fancy White Bread

3 Scallions, Sliced Small

1 Ounce Caviar

1 Tablespoon Chopped Fresh Chives

1 Tablespoon Capers


Dip cucumber slices in French dressing to coat. Place on a wire rack to drain. Cut bread into rounds the same size as the cucumber slices. Butter and lightly toast. Place one cucumber slice on each toasted round. Top with sliced scallions and a dollop of caviar. Sprinkle with chives and capers.
