Fabulous Carrots

Side dishes are one of those things I don’t think you always need a recipe for. I have a recipe for steamed carrots. I mean, do I really need a list and directions for that? I guess some people may . . .



This is a recipe I am glad I had. Wow, these carrots were amazing!



Obviously, bacon. You can never go wrong with bacon.



Cooking the onions and carrots in the bacon drippings infuses them with that bacon flavor.



I was concerned that the carrots would not cook enough. They actually did. They were just soft enough.



Honestly, this was an amazing side dish. We all loved it!



BACON FRIED CARROTS

1 Pound Carrots

1 Medium Onion, Chopped

3 Bacon Slices

1/2 Teaspoon Salt

1/8 Teaspoon Pepper


Pare then slice carrots. In a skillet cook bacon until crisp. Remove and set aside. Add carrots and onion to bacon fat. Sprinkle with salt and pepper. Cover and cook over low for 10 minutes. Uncover and cook until carrots are brown, stir occasionally. Crumble bacon and add to carrots. Stir to combine. Serve.
