Exciting Carrots?

I know, I know, how can you make a vegetable exciting. Usually the vegetable is the after thought to the main dish. It is there, but generally forgotten.

This recipe gives you a side dish that gets noticed.

I steamed my diced carrots for about 7 minutes. This made them a little soft, but not mushy. I hate mushy overcooked vegetables.

The sauce is where the pizzaz is. The pimiento adds a little color and texture.

But the main thing that makes these carrots interesting is the chili sauce.

It gives the dish a little spiciness, but not too much.
We all really loved these carrots. It seems crazy, but I kind of wanted more when they were gone.
SPANISH CARROTS
12 Medium Carrots, Cooked, Diced
1 Clove Garlic
2 Tablespoons Butter
3/4 Teaspoon Salt
1/8 Teaspoon Pepper
4 Ounces Pimiento, Chopped
1 Tablespoon Chili Sauce
Cook garlic in butter for 3 minutes. Remove garlic and add carrots, salt, pepper, pimiento and chili sauce. Heat through.
