My husband and I have a favorite Italian restaurant that has amazing eggplant fries. It is an appetizer that we always order.
So when we had an abundance of last week, I though I would try to make the fries at home.
This recipe seemed like it would work for that purpose. The recipe does call for the eggplant to be cut into rounds, but rounds and matchsticks aren’t all that different.
They are very simple to make. French frying is a very simple method. You dip in flour, then egg, then crumbs.
Frying the eggplant takes mere minutes. They really don’t need all that much time to become tender.
The only difference with the ones we get from the restaurant is that they sprinkle theirs with basil and a little parmesan.
I could have done that, but didn’t think of it until later.
These were absolutely amazing and delicious! You definitely need to make these!
FRENCH FRIED EGGPLANT
1 1/2 Pound Eggplant
Flour
2 Eggs, Beaten
Fine Bread Crumbs
Oil
Salt and Pepper
Peel eggplant and cut into 3/4inch thick slices. Cut each slice into 3/4 inch wide strips. Heat oil to 380 degrees. Dip each eggplant slice into flour, then into egg, then into crumbs. Fry a few at a time until golden. Drain on absorbent paper. Season with salt and pepper to taste.
