Don't Walk Away While Broiling

Despite being over cooked, these were fabulous!



I purchased a fancy pumpernickel loaf for the bread. It was already cut thin. And since the loaf was small, there was very little waste. Don’t worry, it isn’t actually waste - I will make bread crumbs with the trimmings.




The cheese, bacon, mustard, cayenne and Worcestershire go so nicely together.



The Worcestershire and cayenne give the topping a bit of a kick, but a very mild one.



The mustard enhances the flavor of the cheese.



And the bacon - well it’s bacon. Honestly though, I think if I made them again I would add another strip of bacon. There should have been more.


I placed my tray under the broiler. Went to the restroom. And when I came back they were very brown. I was gone mere minutes.



So my suggestion is don’t walk away once you put them under the broiler. It takes very little time for the cheese to melt.



That being said, they were delicious. We ate about 90% of them without even thinking about it.


BACON AND CHEESE CANAPÉS

Rounds Of Bread

2 Cups Shredded Sharp Cheddar Cheese

2 Slices Minced Crisp Bacon

1/4 Teaspoon Dry Mustard

Pinch Cayenne

1 Tablespoon Worcestershire sauce


Toast bread rounds on one side. Mix together cheese, bacon, mustard, Worcestershire and cayenne. Spread thickly on untoasted side of bread. Place on broiler until cheese is melted.
