If you know someone who is gluten free - you should make these cookies for them.
That’s right, these cookies don’t have any flour. And yet, they still look and feel like a traditional cookie.
The egg whites are the key to keeping the cookies together. It works almost like a meringue, but just not whipped that much.
Because there is no flour, you really only taste the oats, dates and walnuts.
There is no filler, just the ingredients.
The cookies have a nice chewiness that stays for a while.
They really do taste nice.
CHEWY OATMEAL COOKIES
2 Cups Quick Cooking Rolled Oats
1 Cup Packed Brown Sugar
1/2 Cup Vegetable Oil
2 Egg Whites
1/4 Teaspoon Salt
1/2 Teaspoon Almond Extract
1/2 Cup Cut Up Dates
1/2 Cup Chopped Walnuts
Heat oven to 325 degrees. Stir together oats, sugar and oil in a mixing bowl. Beat egg whites until frothy and add to the oat mixture. Stir in salt and almond extract. Stir in dates and walnuts. Drop mixture by teaspoonfuls on a lightly oiled baking sheet. Bake 15 minutes. Cool before removing from baking sheet.
