Different, But Still Good

I have had minestrone before. I guess I had it in my head what to expect.



This soup wasn’t any where near what I was thinking it would be.



The bacon, ham and sausage were nice. The soup had a large amount of pork - and who doesn’t love that!



The rice was the strangest part. Every minestrone I have ever had before had small pasta in it. I used a wild grain blend. It was a nice difference.



For the mixed green vegetables, I used frozen peas and spinach with some broccoli flowerets.



The soup is very hearty, full of meat and full of vegetables.



Great for a cold night, but probably good on a warm one too!


MINESTRONE

1/4 Pound Bacon, Chopped

1/4 Pound Ham, Chopped

1/4 Pound Italian Sausage, Chopped

2 Onions, Chopped

2 Tomatoes, Chopped

1/2 Cup Rice

1/2 Cup Dried Beans, Soaked In Water for 2 Hours

6 Cups Stock

1/4 Cup Diced Celery

1/4 Cabbage, Diced

1 Cup Mixed Green Vegetables

1 1/2 Teaspoons Salt

1/8 Teaspoon Pepper

Grated Parmesan Cheese


Fry bacon, ham, sausage and onions together until slightly browned. Add tomatoes, rice, beans, celery and stock. Simmer until the beans are tender, skimming off fat frequently. Add cabbage and mixed green vegetables. Simmer until soup is thick and vegetables are tender. Season with salt and pepper. Serve topped with grated cheese.
