Didn't Love The Wine

I will start with the positives. The grits are super creamy and cheesy. The cheddar in the grits is great. The cheese on top bakes beautifully.

The negatives – there is not enough salt! I would definitely add some salt to the grits while they are cooking. I would think you would get a little more saltiness from the cheese, but it just isn’t enough.

Secondly, the wine makes the grits taste weird. Maybe this would change with a different wine. But I just didn’t care for it.

So they are a nice side dish, just not the best side dish.

CHEESE GRITS

1 ¼ Cups Grits

3 ½ Cups Boiling Water

1 Cup Cheddar Cheese

½ Cup Butter

2 Eggs

1 Ounce Dry White Wine

1 Cup Milk

½ Cup Grated Swiss Cheese

Cook grits in boiling water for 10 minutes. Add cheddar and butter into grits. Stir until melted. Remove from heat. Combine eggs, wine and milk. Add to grits mixture. Pour into a greased casserole dish and bake in a 350 degree oven for 45 minutes. Sprinkle with Swiss cheese and continue cooking for 5 to 6 minutes.
