Delightfully Fast, Easy and Delicious

My husband likes to take baked goods into his office when he has meetings and such. Usually he lets me know when there is a meeting, so I have some time to plan.



Yesterday morning, at 6:45 he let me know there was a meeting at 8:30. Did I make anything?




Well, since this was the first I was hearing of it, no I didn’t. I needed something fast that would still taste delicious.



I pulled this recipe! Anything that has Quick in the recipe title should work in a hurry, right. . .



Well, the recipe lived up to it’s name. It was quick.




In the time it took my husband to shower and shave, the coffee cake was ready.



The cake portion was soft and moist. It was a standard flavor, nothing really special in the cake layer.



The flavor comes from the crumb topping. It is a very dry topping going on. The bread crumbs were strange to me. I have never made a crumb topping with bread crumbs.




The coffee cake was a hit, I even got a message from one of the attendees to thank me for providing it and how much she enjoyed it.



So if you are in a hurry to provide a nice breakfast - try this out!




QUICK COFFEE CAKE WITH CRUMB TOPPING

1 1/2 Cups Sifted Flour

1/2 Cup Sugar

2 Teaspoons Baking Powder

1/2 Teaspoon Salt

1 Egg

2/3 Cup Milk

3 Tablespoons Melted Shortening

CRUMB TOPPING

2 Tablespoons Butter

2 Tablespoons Sugar

1/4 Cup Sifted Flour

1/4 Cup Dry Bread Crumbs

1/2 Teaspoon Cinnamon



Sift flour, sugar, baking powder, and salt together. Beat egg and add to milk and shortening. Stir liquids into dry ingredients. Pour into a greased pan. Cream butter and sugar together. Add flour, crumbs and cinnamon. Sprinkle over cake. Bake in a 425 degree oven for 25 minutes.
